Slow Cooker Baked Potato Bar

When summer comes, I always feel lazy about cooking. It's usually hot in the house, so I don't feel like baking and making the house even hotter. I love to use the slow cooker for some easy meals.

This slow cooker baked potato bar is not only easy, but it's also so easy to change it up to serve what your family will like. We like to use bacon, broccoli, green onions, cheese, and sour cream. Plus it keeps you out of the kitchen.

I start by washing my potatoes and scrubbing them down. Then I set them aside while I wash off the broccoli and green onions.

While the potatoes, broccoli, and green onions are drying I tear off 4 pieces of aluminum foil large enough to cover the potatoes.

I place a potato on the foil and pierce it with a fork a couple of times. Drizzle some olive oil over the baked potato and sprinkle on some sea salt.

Then wrap up the potatoes and place them in the crock pot.

I usually cook them for 8 hours on low, but you can also do 4 hours on high if you are in a hurry.

While they are in the slow cooker, cut up the broccoli and green onions. Take a large piece of aluminum foil and place the broccoli in the middle of it. You can add some olive oil and sea salt if you would like. Place the broccoli and green onions in the refrigerator.

About 1 hour before the potatoes are done add the broccoli to the slow cooker. After the potatoes have cooked for about 8 hours and the broccoli about an hour they should be done.

I like to put out small bowls of cheese, sour cream, bacon bits, green onions and butter. Then, the family can each make their own baked potato.

This is a great way to keep the kitchen cool in summer. It also works really well for inexpensive summer parties. What do you like to cook in your crock pot in summer?

    What a fantastic idea! We love having baked potatoes, but I didn't think about cooking them in the crock pot. Thanks for the tips!
