Learn how to make the viral pancake scrambles that make the perfect breakfast for any day of the week without all of the hassle of flipping regular pancakes!

scrambled pancakes

I have been seeing the scrambled pancakes all over the internet. From the first time I saw them, it looked so easy I decided to use my favorite pancake recipe and give the scrambled pancakes a try.

Honestly, I did some research, and while this is a recent trend, this idea has been around forever! In Austria they are referred to as a Kaiserschmarrn recipe. The traditional Austrian dish uses extra egg, so they taste a little different. But I am using my favorite pancake mix, and they turned out perfect for us!

Ingredients Needed

  • Egg
  • All purpose flour
  • White sugar
  • Baking powder
  • Salt
  • Milk - I used almond milk.
  • Butter - salted or unsalted butter will work.

Gadgets Needed:

  • Cast Iron Pan
  • Griddle (I love this electric griddle from Amazon)
  • Pancake Batter
  • Spatula
  • Large Bowl
  • Whisk

How to Make the Best Scrambled Pancakes

Combine all of the dry ingredients in a large mixing bowl.

Then add in the milk, melted butter, and egg.

Stir gently until there are no lumps in the batter.

Heat up a large skillet, cast iron, or griddle over medium heat.

Grease with non stick cooking spray.

Pour the batter into the pan. After 20-30 seconds of cooking, scrape with a spatula so the pancake pieces cook like eggs.

Continue to break them up into bite-sized pieces and move the batter so the texture is like scrambled eggs.

Once they come to a thick dough, turn the heat off.

Serve with your favorite pancake toppings.

If you want the pancakes more golden brown, don't overcrowd the pan. Let the small piece cook until they have crispy edges. You may want to turn the pan to medium-high heat.

Scrambled Pancake Toppings

I like to move my pancakes to a plate and sprinkle them with powdered sugar.

We serve them with a little bit of maple syrup and just completely skip using butter. I have also served them with some apple butter and they are delicious that way too.

You can also serve with jam, fruit compote, or berries and whipped cream.

I have to admit, I don't know when the next time I will make round pancakes this idea is kinda genius!
