    Freezer Breakfast Burritos

    If you are looking for a quick, inexpensive breakfast then these freezer breakfast burritos are perfect. They can be made with all different kinds of ingredients to make them work for your family.  I make around 10-20 at one time and then put them all in the freezer. They can be warmed up in the microwave in about 2 minutes. They are great for a fast breakfast on the go.

    I start by scrambling eggs, I do a dozen eggs for 12 burritos. Then, while they are cooling I lay out aluminum foil on the counter and put the tortillas on top of the foil. Once the eggs have cooled then I add eggs on top the tortillas.

    Then you can cook your meat and whatever else you would like to add. My son loves hash browns and cheese, my husband loves bacon and cheese.

    Once I have the meat and or hash browns I add those on top the eggs. I fold them by folding the ends in first and then fold sides in tightly. Then I roll them up in the aluminum foil.

    I like to put them in a Tupperware in the freezer. I have one color tupperware for meat burritos and one for vegetarian burritos.

    They are best if you place them from the freezer to the fridge the night before. Then give them about 1 minute in the microwave. If you are doing directly from the freezer to the microwave give it around 2 minutes. It's a great quick and easy meal on the go. I can make 12 breakfast burritos for under $6 or less than $.50 each. This is so much cheaper than going through the drive thru.

     Freezer Breakfast Burritos

    • 12 eggs
    • 12 tortillas
    • 1 cup cheese
    • 1 package Hash browns or toppings of your choice

    Lay out tortillas on top of the aluminum foil. Scramble eggs until cooked. Cook hash browns according to directions on the packaging. Spoon eggs onto tortilla, then add hash browns or other toppings. Top with cheese. Fold the sides in and roll up tightly. Then roll up in the aluminum foil. Store in Tupperware or freezer safe bags. To serve remove from freezer and let sit overnight in fridge. Microwave for around 1 minute or 2 minutes if frozen. Enjoy.

        We use La Banderita Low Carb Tortillas. They are about 10". They are a little more expensive, but they don't rip or tear like some tortillas. Thanks!

      Just a note of caution when purchasing CORN tortillas from this brand (and others). I bought them recently and found parabens listed in the ingredients. While parabens occur in nature normally, some of us are trying to cut down on paraben exposure overload due to them being overused as a cheap preservative in food, personal care products and other items. Some people believe that paraben use leads to disease and early onset of puberty.

      I'm a big label reader and trying to learn all I can about nutrition. I hope you all are, too. 🙂
