Easy Breakfast Recipes For Back To School

I know it is only mid-July but the kids will be headed back to school in less than a month here. I have always found it is hard to get back into the routine after summer. Mornings seem rushed before school and there isn't always a lot of time to eat breakfast.

Breakfast doesn't have to be cold cereal or pop-tarts though. With a little bit of planning ahead you can make some easy and quick breakfast recipes your kids will love.

Freezer Pancakes

One of my kiddo's favorite breakfast meals is pancakes. Since I don't have the time to whip up a batch of pancakes before school I make a double batch of pancakes and freeze them. Then he can just grab some from the freezer and reheat them in the microwave. It's easy and makes a great breakfast.

Easy Egg Muffins

These easy to make egg muffins taste great, plus they make a quick breakfast on the go. One of my favorite things about these muffins is how easy it is to customize them. I add meat in the ones for my husband and a little extra veggies in the ones for my son. These muffins are perfect for picky eaters.

Freezer Waffles

Waffles are another easy breakfast for the kids. You can make a large batch and freeze them to have as a quick meal. I break the waffles apart in small bite size pieces before I freeze them and then I just pop them in the microwave and serve with syrup. You can see the recipe I use and how I freeze them here.

Overnight Oats

Overnight oats have to be one of the simplest breakfasts, yet is packed with protein. This recipe for raspberry and almond overnight oats are amazing. It's easy to just grab a small jar, mix in the raspberries and almonds and start eating. Perfect for kids that are in a hurry.

Freezer Breakfast Sandwiches

My son loves breakfast sandwiches but I don't like overpaying for the pre-made sandwiches. I've found that it only takes a little while to make a large batch of breakfast sandwiches and freeze them. These are perfect to make on a weekend for a quick & easy weekday breakfast.

Crockpot Casserole

I love using the crockpot to cook. It just makes my life easier. You can use your crockpot for breakfast too. This easy fully loaded crockpot casserole is delicious and simple to make. If you have a timer on your crockpot you can just set it before you go to bed and wake up to a hot breakfast.

Freezer Breakfast Burritos

I started making these breakfast burritos years ago and they are so much better than the ones you buy in the store. They not only taste great but they are quick to throw in the microwave. I love how customizable they are too. I can make up eggs and then my husband and son can add in what they want in each of the burritos. Perfect for picky eaters!

Cinnamon Roll Breakfast Casserole

If you are looking for a sweet instead of savory breakfast dish this cinnamon roll breakfast casserole will fit the bill. It's easy to make and the kids will love it. I like to serve things like this with some eggs for an easy breakfast.

Early school mornings don't have to be stressful and hurried. You can have a nice breakfast without a lot of work with these easy breakfast meals. What easy breakfast do you like to make on busy mornings?
