I like to put the sharpener in a clean sink to sharpen the knives. I have noticed that they can leave teeny, tiny metal shavings and I just don't want that on my counter.
Start by running the knife from base to tip slowly over the coarse sharpening area. You don't have to press down really hard. Just run it slowly over it around 3-4 times depending how dull your knife is. It keeps the nice angle on the blade that your knife came with. You don't have to do anything but pull it straight through the sharpener.
Then, run it over the fine sharpening area base to tip around 3-4 times.
Once you have sharpened the knife then you can wash it to remove any small metal shavings. I just use hot water, a little dawn soap, and a kitchen sponge. Dry the knife and set it aside. Once you are finished sharpening all your knives I recommend washing off the knife sharpener to remove any of the metal shavings. Then dry off the sharpener and put it away until next time.
I only sharpen my knives every month or so but I have found it makes such a big difference. This sharpening tool keeps my knives razor sharp.
