Cheesy Reuben Dip

One of our family's favorite meal are these crock pot reuben sandwiches. They are so easy to make and taste great. I have made them a couple of times when people come over, but they are hard to eat.

I wanted to find a way to make them a little easier to serve. So, I played around with the recipe and came up with this cheesy Reuben dip.

This dip is seriously so delicious and cheesy. The best part about this dip is that it only takes a few minutes to make.

Then, let it melt in the crock pot and you are good to go. It's perfect for a party.

For my reuben meat I use the Carl Buddig beef packages. It's much cheaper and easier than buying corned beef and slicing it up. I just cut the beef into small slices.

Add the cheeses, onion, thousand island dressing and the meat to the crock pot. Place on low heat for about 1-2 hours. Stir every 15-20 minutes to make sure your cheese doesn't start to burn.

For the first 45 minutes it may look really lumpy, but as the cheese starts to melt it will turn to more of a creamy consistency.

Once the cheese is melted you can move it to a bowl if you plan on eating it right away. If you want to serve it at a party, I recommend leaving it in the crock pot and setting the crock on keep warm. Serve with crackers.

This dip is so deliciously cheesy it is so crave-worthy. Both kids and adults love it.

Cheesy Reuben Dip

1 package cream cheese
1 1/2 cups shredded swiss cheese
1 cup shredded gruyere cheese
6 oz. Carl Buddig beef, sliced
1/3 cup Thousand Island dressing
1/2 chopped onion

Combine cream cheese, swiss cheese, gruyere cheese, beef, dressing and onion in a crock pot on low heat. Stir every 15-20 minutes. Dip is ready when the cheese is melted, about 1-2 hours. Serve warm with crackers.

    Oh yum! There is always something so addicting about melty cheese in warm dips. We will have to give this a try one of these Sundays!
