Do you ever find a meal that your whole family just loves but has you in the kitchen all afternoon? I hate when that happens.
A few years ago I found a new recipe that my family loved. Unfortunately, it was one of those recipes that take a decent amount of time to make. Despite the fact that we loved it so much, I was only making it every other month. So, I took some time and tweaked a few things on the recipe to make this freezer stromboli kit. Now I can just pull out a kit in the morning and with little work we have a great dinner we can all enjoy.
I can make one Stromboli for dinner and three more kits. I usually buy everything I need from Aldi for around $10. This makes them only $2.50 each. You can change up whatever you like for the fillings. We love peppers, mushrooms, onions, cheese and pepperoni. Throw together a salad and you have a great meal.
Start by mixing up the dough for the stromboli. Place 1 cup warm water in a mixing bowl with 2 packets yeast. Let sit for about 5 minutes until it is bubbly. Then add 2 1/2 cups room temperature water, 1 teaspoon salt, and 4 tablespoons of vegetable oil. Slowly add in 8 1/2 cups of flour, you may need to add more or less. The dough should not stick to your fingers when you touch it. Mix at a low-speed with a dough hook for about 5 minutes. Cover the bowl and let rise for about an hour.
While the dough is rising, you can work on the filling. I use 2 onions, a small container of mushrooms, and a small container of peppers. Wash them off and chop them up. Place them in a large skillet with a bit of olive oil and sauté them for about 5 minutes.
Once they are finished sautéing set them aside so they can cool. If you place them in a bag or container while they are still hot they will get watery. When they are cooled you can divide them into fourths. I put three in a bag and one for dinner that night.
When the dough is done then put it on a floured counter. Divide the dough into four parts. I wrapped the dough first with plastic wrap and then placed them in a large freezer bag.
The fourth part I used that day. I rolled it out to about 12 by 18 inches. It doesn’t need to be perfect, just about that size.
I then added the vegetable mixture to the center of the dough. Try to keep it in the middle.
Add a heaping cup full of cheese on top of the veggies. I added a heaping cup of cheese to three other ziplock bags to go in my kit.
Finally, I added pepperoni on top of the cheese. I used a 6 oz. container of pepperoni and split it 4 ways. One part on top of my stromboli and the other three in bags to go in the kit.
Now you can braid your stromboli. It is very easy to do and comes out looking great. Start by cutting one inch slices in the dough. You don’t need to be exact, I just guesstimate.
Start at one end and fold the strips into the middle.
Fold one on top of the other until you have finished all the strips.
Now you can brush the top with water or egg whites and sprinkle some seasonings over the top. We like Italian seasonings on ours.
Pop it in the oven at 350 degrees for about 15-20 minutes.When it is lightly browned on top it is done. Pull it from the oven and let it cool for a few minutes. Then slice it and serve.
While the stromboli is in the oven you can gather up all your food to put in the kits. Make sure you mark your kits with what is in it and when you made them.
Store them in the freezer. I recommend pulling them from the freezer the morning you want to use them and put the kit in the fridge. Then it only takes about 5 minutes to make up your stromboli.
Total I usually spend about 20 minutes on the dough, 20 on the veggies, and 20 minutes assembling my kits. Plus remember you have to let the dough rise for about an hour. This is so worth it to me to have an easy freezer meal that we all enjoy.
Freezer Stromboli Kit
1 cup warm water
2 envelopes Yeast
1 teaspoon Salt
2 1/2cups room temperature water
4 tbsp. Vegetable Oil
8 1/2 cups Flour
1 lb. Shredded Cheese
6 oz. Pepperoni Slices
1 bag mini peppers
1 box Mushrooms

While dough is rising slice onions, peppers, and mushrooms. Saute for about 5 minutes and divide into fourths once cool. Divide cheese and pepperoni into four portions. When dough is finished rising divide into 4 portions and roll out dough to approximately 12 x 18 inches. Put three other dough portions into ziplock bag.
Add one portion of the veggies, cheese, and pepperoni to the center of the dough. Cut and braid the dough. Brush the top of the dough with water or egg and sprinkle with Italian seasonings. Bake in oven at 350 for 15-20 or until golden. Assembly the other three kits while the stromboli is cooking.
