Add all the dry ingredients such as flour, baking powder, sugar and salt to a mixing bowl.
Then add in the egg, melted butter, and milk.
Mix well.
Heat a pan, a skillet or griddle and spray with margarine or vegetable oil.
Pour or squirt the mixture onto the griddle.
Cook for 1 minute and flip it upside down and cook other side too until both sides are golden-brown.
When the pancakes are done, lay them on a tray and place them in the freezer.
Once they are completely frozen you can place them in a freezer-safe bag or container. Label the bag with the date and item.
Whenever you need a quick breakfast just pull out a few and microwave them. I usually do around 8-10 minis for about 30 seconds.
